Running a restaurant was extremely difficult during the height of the COVID-19 outbreak, but Chef Paul found a way. The co-founder of the 37-unit Wahlburgers chain, along with brothers Mark and Donnie, dishes on surviving the pandemic, retailer relationships and his one-burger-at-a-time philosophy.

Paul Wahlberg
Co-Founder and Chef
Wahlburgers
Chef Paul Wahlberg was born in Dorchester, MA one of nine siblings, which include his famous younger brothers, Actor Mark Wahlberg and Musician/Actor Donnie Wahlberg. While Mark and Donnie spent their childhood daydreaming of their inevitable rise to fame as performers, Paul spent his time in the family kitchen with his mother Alma. According to Paul, his cooking was influenced by the Sunday suppers he shared at home with family and friends. At age 16, he began working for a caterer and after graduating high school, he spent time in several kitchens around Boston including The Charles Hotel, The Four Seasons Hotel and Bridgeman’s Restaurant in Hull, MA where he served as Executive Chef for nine years. Following nine years at Bridgeman’s, Paul embarked on his first solo venture opening Alma Nove, an Italian/Mediterranean restaurant in Hingham, MA. Shortly after opening Alma Nove, Paul opened his first Wahlburgers directly across the street. Wahlburgers, the subject of an A&E reality show which wrapped 10 successful seasons just last year, offers a fun, casual music-filled atmosphere where guests, like family, share great food, a few laughs and lots of love. While its interior decor is filled with photos and memories celebrating the brothers' life journeys from Dorchester neighborhood kids to rising Chef and international superstars, Wahlburgers makes food the real star. Wahlburgers currently has 49 locations throughout North America and Europe.

The COVID-19 pandemic changed Americans’ food habits. Although the initial stock-up behavior has eased, FMI research indicates higher retail-sector food spending will continue for the foreseeable future as home cooking displaces spending on restaurant foodservice. Thirty-nine percent of consumers in mid-May said that they expect to eat out less often once the pandemic is over, but cooking fatigue is a growing concern, too. Retailers are challenged to identify the right balance of strategies to showcase retail foodservice as filling the convenience void and culinary aspect left by traditional foodservice. Join FMI’s fresh merchandising and health and well-being experts as they assess the most influential consumer trends regarding grocery foodservice, and get a preview of new research launching in September.
